EDAMAME GUACAMOLE
From Whole Foods website this twist on guac is healthy and yum. Serve with raw veggies or with Stacys Pita chips.
1 cup frozen shelled edamame, thawed
1 small, ripe avocado, peeled and pitted
1 chipotle pepper
1/3 bunch cilantro
1/4 white onion, roughly chopped
Juice of 2 limes
2 to 3 tablespoons water
Sea salt and freshly ground black pepper
Put edamame, avocado, chipotle, cilantro, onion and lime juice in a food processor and pulse until almost smooth. Add enough water to make a creamy consistency and pulse again. Transfer guacamole to a bowl, season with salt and pepper and serve.

so poopers, this is my schedule for the fall of my sophomore year (weird sophomore in universidad) but... the green very early in the monring (EDUC 210 literacy instruction) is only a field placement that is 2 weeks, and the turquoise Math 253 (death), that is at the way bottom on thursday is just for tests. so its pretty dang good.

bathroom update
so papi came on weds and tore out the sink, and put up the frame for the new wall and pocket door. nothing since. wah wah. dad will be picking up cabinets for the outer walls today, and we are looking at flooring and a faucet. i agreed that the first two doors of the sink cabinet do not have to open - whadda ya think?

green eating.
Remember when I wanted to get this green collapsable table from CB2 so I could eat on something stable other than my lap? Well, Jane had the fun idea of using cutting boards as lap tables instead. I went to CB2 and was going to get a cutting board, but I found this fun tray instead – great decoration piece too!
Would be the perfect lap table for your tasty meal, mom!

fantabulous idea but our creative and tech savvy family lead, samantha. at work on a sunday, again, and still not up and running with my new blog basil madness - although i do have the header created. i just have to remember to take photos of food as I cook it.
like last night - i made these easy bbq'd ribs combining bone sucking sauce with a habanero sauce and marinated them all day. then dad did his grill magic. we had a salad of mache, avocado, slivered almonds, slivered red onion, and grapefruit - with a balsamic vin dressing. and dad made his microwave brown rice from trader joes. yummiful.
wish you girls were here to join in. and wish it was warm enough to enjoy on the deck.
